Apple Recipes
These were first posted as entries in the Spring Into Summer Event, 29 to 31 May 2009.
They remain here for all apple-lovers to enjoy.

1. Scarz
My favourite apple recipe is: Potato and Apple Salad
(actual amount depends on how many you are making it for)
4 potatoes
2 carrots
3 apples (any variety)
4 eggs
Miracle Whip (or Mayo)
Gulden's brown mustard
(I am not into onions or pickles or relish, though they may be added to taste, also)
dice the potatoes and carrots and boil till soft.
dice the apples and set aside.
hard boil the eggs.
when potatoes and carrots are done, drain the water and place them in a medium mixing bowl. add the apples. chop up the hard-boiled eggs and add to the bowl.
add two tablespoons of the brown mustard, then add the Miracle whip to taste (some like their potato salad with a lot of Miracle Whip, some like it dryer, or with less.)
Mix together and then cover and chill.
I enjoy this recipe because: I enjoy this recipe as the crisp taste of the apples truly add to the flavor of the potato salad, almost making it seem more like a fruit salad

My favourite apple recipe is:
Apple Crumb Bars
Servings: 40 bars
Nutrition Information:
Protein: 1g; Fat: 5g; Carbohydrate: 15g; Fiber: 1g; Sodium: 71mg; Cholesterol: 12mg; Calories: 103.
Ingredients:
1 cup quick or old-fashioned (rolled) oats
1 1/4 cups all-purpose flour, divided
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter or margarine, softened
1 large egg, beaten
4 Golden Delicious apples, peeled, cored, and sliced
1/2 cup granulated sugar
1/4 teaspoon nutmeg
Crumb Topping
1/3 cup all-purpose flour
1/3 cup quick rolled oats
1/3 cup sugar
1/4 cup (1/2 stick) butter or margarine
Method:
1) Heat oven to 350° F. Lightly grease a 15- by 10- by 1-inch baking pan. Prepare Crumb Topping; set aside.
2) In medium bowl, combine flour, oats, and sugar. With pastry blender or fork, cut in butter until mixture is crumbly.
3) In medium bowl, combine oats, 1 cup flour, the brown sugar, baking powder, and salt; cut in butter until crumbly. Stir in beaten egg. Spread mixture evenly in pan.
4) Toss apples with sugar, remaining 1/4 cup flour, and the nutmeg. Spread apples over oatmeal layer. Sprinkle Crumb Topping in a diagonal pattern over apples. Bake 30 to 35 minutes or until apples are tender. To yield 40 bars, divide the 15-inch-long side into 8 sections. Divide the perpendicular 10-inch-long side into 5 sections.

My favourite apple recipe is: Chicken, Apple Walnut Salad.
Ingredients:
1 green apple sliced in 6ths or as desired
1 cup walnuts crushed or diced
1/4 cup Gorgonzola cheese (optional)
1 grilled chicken breast chopped
1 package spinach leaf salad mix
1 cup raspberry vinaigrette salad dressing
To make:
Toss apple, chicken, spinach and walnuts in salad bowl. Top with Gorgonzola cheese and raspberry vinaigrette. Enjoy.
I enjoy this recipe because: 1. You don't actually have to cook it. (except the chicken, but if you buy a precooked chicken breast you don't even have to do that).
2. It's light and cool for summer, it's a yummy mix of salty, sweet and tart.
3. It's filling but light and great for a diet.

My favourite apple recipe is: Butterscotch Apple Salad
Ingredients:
1) Two Gala Apples (small and sweet apples)
2) One Red Apple
3) One Green Apple
4)1 cup unsalted roasted peanuts (optional)
5)1 8oz Fat-free, sugar-free Butterscotch pudding packet.
6) 1 container of Whip Cream
To Make:
Chop all the apples up, and mix them in a bowl. If you are using peanuts put them in now. Mix in the whip cream. Make sure to get whip cream on all apples chunks as evenly as possible.
Pour the packet of Butterscotch pudding on top mixing it with the apples and whip cream, until you do not see any large crumbs of the pudding left.
Chill in refrigerator for a few hours, or until it is at the consistency you want. Eat and enjoy!
I enjoy this recipe because:
1) It's quick, and easy
2) You can make a lot or enough just for you simply by adjusting the amount of the ingredients.
3) Great for a healthy snack, especially since the pudding is not bad for you.
4) Very yummy! The butterscotch pudding gives it a nice flavor, as well as the different flavors of the apples. One can even try other flavored pudding for variations.

1 3/4 c All-purpose flour
1/4 c Sugar
1 ts Cinnamon
1/2 ts Salt
1/2 c Butter
2 tb Butter
1/4 c Water or apple cider
--------------------------FILLING-------------------------------
8 McIntosh apples
- peeled, cored & sliced
1 2/3 c Sour cream
1 c Sugar
1/3 c All-purpose flour
1 Egg
2 ts Vanilla
1/2 ts Salt
-------------------------TOPPING-------------------------------
1 c Chopped walnuts
1/2 c All-purpose flour
1/3 c Brown sugar, firmly packed
1/3 c Granulated sugar
1 tb Cinnamon
1 pn Salt
1/2 c Butter; room temperature
For Crust: Combine flour, sugar, cinnamon and salt in medium bowl.
Cut in butter using pastry blender or 2 knives until mixture
resembles coarse meal. Add water and toss mixture gently with fork
until evenly moistened, Gather gently into ball. Transfer to lightly
floured board and roll into circle slightly larger than a deep
10-inch pie plate. Ease pastry into pan and flute high edge. Set
aside.
For filling: Preheat oven to 450 F. Combine all ingredients in large
bowl and mix well. Spoon into crust. Bake 10 minutes. Reduce oven
temperature to 350 F and continue baking until filling is slightly
puffed and golden brown, about 40 minutes. (If edges of crust begin
to brown too quickly, cover with strips of aluminum foil.)
For topping: Meanwhile, combine walnuts, flour, sugars, cinnamon and
salt in medium bowl and mix well. Blend in butter until mixture is
crumbly. Spoon over pie and bake 15 minutes longer.

Zin's Stuffed Apple Recipie
6 Apples [I like galas or granny smith for this but each to his own, right?]
4 tbsp packed Brown sugar
1/4 tsp Cinnimon powder
1 tbsp Butter [or margaine if you prefer]
1/2 cup Rolled oats [more if the mix loooks watery]
1/3 cup Orange Juice Concentrate [or lemon juice- but the orange gives a nicer flavour]
1 tsp grated Orange peel
1 tbsp finely sliced filberts [entirely optional if you dont fancy nuts]
Toothpicks
Optional ingrediants: [just to change things up a bit]

This is a recipie Ive enjoyed for some years. I hope you like it as much as I do!
Wash the apples & core them. I dont have an apple corer so I just chopped them in half, scooped the guts out & very carefully stabbed both halves with a fork. [Don't puncture the skin!]
Mix the oats, the sugar, cinnamon, butter, filberts & orange juice /peels together in a bowl so it's mushy [this is where you can add clove powder or mint leaves into the mix.] If theres any salvagable bits from the cores add them now.
Then stuff both sides of the apple together- it'll be messy. Staple them closed with toothpicks.
Put filled apples on a foil lined baking pan and be prepared for a sticky mess as the juice & butter & tasty stuff tends to squish out during cooking.
Heat the oven 350 [works good]
Bake apples until tender [soft to touch but not mushy], probably about 30-40 minutes depending on the size of the apples.
Remove from oven -let cool slightly [I forgot this one the last time I made them]
Vanilla Bean ice cream on the side is a nice touch!
Eat [should be self explanitory]

My favourite apple recipe is: warmed brown sugar apples.
Ingredients: 1 royal gala apple (or any apple thats your favorite)
brown sugar
cinamon.
Prep: core out apple
place in bowl, fill the cored out center with brown sugar till its packed tight.
sprinkle cinamon on top.
place bowl in microwave for 4 min on high, or until the sugar is melted.
let it cool for a few min, then grab a spoon and enjoy!

My favourite apple recipe is: Apple-Oat Crisp
4 c. cooking apples
1 tbsp. lemon juice
1/3 c. flour
1 c. oatmeal, uncooked
1/2 c. brown sugar
1 tsp. cinnamon
1/2 tsp. salt
1/3 c. melted butter
Peel apples; slice into 13x9 buttered pan. Sprinkle lemon juice over apples. Combine dry ingredients. Mix melted butter with dry ingredients until crumbly. Sprinkle over apples. Bake at 350 degrees about thirty minutes or until apples are tender.
I enjoy this recipe because: Its great to have as a sweet and tangy treat in the summer after a long day of play! It reminds me of my childhood 4th of July get togethers at the lake ^.^ Just thinking of this food makes me want to make some but I should really wait til the 4th of july x3

My favourite apple recipe is: Apple dumpling pierogi
This recipe takes a while to prepare, and is best prepared ahead of time, and made in bulk, with the finished pierogi being frozen until ready for use.
Dough recipe:
1 Tablespoon salt
2 cup cornstarch (or potato starch)
3 1/2 cups all purpose flour
2 large potatos
2 large eggs
8 Tablespoons Ricotta Cheese
4 1/2 Tablespoons butter, melted
Place the unpeeled potatos into a saucepan and fill with water to cover the potatos. Bring to a boil, cook until soft, about ten minutes, then drain. Peel the potatos while they are still hot, then mash them well in a large bowl. Make sure all chunks have been mashed. Sift flour, starch and salt together, into the bowl with the potato. Mix well.
Whisk the egg in a small bowl, then add the ricotta cheese and butter, and blend together until nice and creamy. Add butter mixture into the flour and potato mixture. Mix well.
Place dough on lightly floured bread board and knead for five minutes until smooth and firm. Cover the dough with a soft cloth and let it rest for ten minutes while preparing the filling.
Fruit Filling:
12 apples
1/2 cup sugar
1/2 cup brown sugar
1/4 teaspoon cinnamon
Peel and core the apples. Chop the apples up into tiny pieces, or use the coarse setting in the grinder. Add sugar and cinnamon and mix well.
Roll the dough out on a lightly floured bread board to about a 1/8 inch thick rectangle. Cut the dough with a 3 1/2 - 4 inch round cookie cutter or a lightly floured glass or jar.
Put about 1 1/2 tablespoons filling on each round of dough. Moisten the edge of the dough around the circle. Stretch one side of the dough to meet the opposite side, pressing the wet edges together to form a half circle, and pinch together, sealing the pierogi.
Fill a large saucepan with water and bring to a boil. Lower heat to a simmer, then carefully drop each pierogi into the water. Cook until the pierogi rises to the surface. Remove from the pot with a slotted spoon and drain. Place on waxed paper until the water has evaporated from the surface of the pierogi.
Pierogi can now be placed in a plastic freezer bag, sealed, and stored in the freezer or the refrigerator until ready for use. (When my grandmother and I used to prepare these, we would place the pierogi on a flat cookie sheet and freeze the pierogi first, then place the pierogi into the freezer bags. This way none of the pierogi stuck to each other)
Leftover dough can be rolled out and sliced into 1/2 inch strips which can then be boiled and laid out on wax paper until the water evaporates from the noodle, to make egg noodles. These can be frozen until ready for use as well.
To Prepare the pierogi:
Fry pierogi, or bake pierogi in preheated oven at 325° for 30 minutes, smothered in butter. Serve with sour cream.
You can be creative with your fillings, making meat fillings, potato fillings, sauer kraut, other fruit fillings, etc. The dough recipe remains the same no matter what filling you decide to go with.
I enjoy this recipe because: It is quite delicious and reminds of the times I helped my grandmother to prepare pierogi in the kitchen. She and I would spend two full days in the kitchen doing nothing but preparing pierogi and freezing them for us to eat throughout the year until she would return to visit us again.

Apple Pandowdy
INGREDIENTS:
4 apples, cored, peeled, thinly sliced
1/2 cup granulated sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup molasses
1/3 cup hot water
1 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons shortening
4 to 6 tablespoons milk
PREPARATION:
Arrange sliced apples in a buttered 11x7-inch baking dish. Combine sugar, cinnamon, and salt; sprinkle over the apples. Combine molasses and hot water; stir to blend. Pour molasses mixture over the apples. Bake apples in preheated 400° oven for about 20 to 30 minutes, until apples are tender.
Meanwhile, make a soft dough. Sift flour with baking powder and salt; cut in shortening until mixture resembles meal. Add milk, mixing with a fork, enough to make a soft dough. Knead lightly for about 10 seconds. Roll dough into a rectangle 1/4 to 1/2-inch thick, to fit over the 11x7-inch pan. Fit the dough over the cooked apple mixture and pierce all over with a fork to let steam escape. Bake at 400° for about 20 minutes longer, or until nicely browned. Serve warm with cream or ice cream.

My favourite apple recipe is: Crown Roast of Pork with Apple-Cranberry Stuffing
Prep Time: 20 min
Total Time: 4 hours 0 min
Makes: 12 servings
Pork
2 teaspoons salt
1 teaspoon pepper
1 teaspoon dried sage leaves, crushed
1 teaspoon dried thyme leaves
1 pork crown roast, 20 ribs (8 lb)
Stuffing
1/2 cup butter or margarine
1 large onion, chopped (3/4 cup)
1 medium celery stalk, chopped (1/2 cup)
8 cups soft whole-grain bread cubes
1/2 cup dried cranberries
1 1/2 teaspoons chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/8 teaspoon pepper
2 medium apples, chopped (2 cups)
1/2 cup Progresso® chicken broth (from 32-oz carton) or water
1. Heat oven to 325°F. In small bowl, mix 2 teaspoons salt, 1 teaspoon pepper, sage and dried thyme; rub over pork.
2. Place pork, bone ends up, on rack in shallow roasting pan. Wrap bone ends with foil to prevent excessive browning. Insert meat thermometer so tip is in thickest part of pork and does not touch bone or rest in fat. Place a small heatproof bowl or crumpled foil in crown to hold its shape. Do not add water.
3. Roast uncovered 2 hours 40 minutes to 3 hours 20 minutes or until thermometer reads 165ºF.
4. In 10-inch skillet, melt butter over medium heat. Cook onion and celery in butter about 2 minutes, stirring occasionally, until crisp-tender; remove from heat. In large bowl, thoroughly mix onion mixture and remaining stuffing ingredients except broth. Add broth; toss. One hour before pork is done, fill center of crown with stuffing. Cover stuffing only with foil during first 30 minutes.
5. When pork is done, place on warm platter, cover with tent of foil and let stand 15 to 20 minutes or until thermometer reads 170°F. (Temperature will continue to rise about 5°F and pork with be easier to carve as juices set up.)
6. Remove foil; place paper frills on bone ends if desired. To serve, spoon stuffing into bowl and cut pork between ribs.
